This summer, take your grilling up a notch with our Thai Mango Chicken recipe. It’s so much better than boring hamburgers or hot dogs.
We’ve partnered with Juicy Juice this year to create unique recipes focused on introducing kids to new flavors, and these yummy cookies do just that!
Juicy Juice is dedicated to helping families discover a new world of flavors through its popular 100% juice line — with 16 different flavors available, there is so much more than just apple juice.
We wanted to expand our recipe to feature some yummy summer flavors, so we decided to try Juicy Juice Mango 100% Juice. It compliments the Asian inspired spices in this dish.
Thai Mango Chicken Recipe
Adapted from Creme de la Crumb
3 boneless, skinless chicken breasts
1 cup Juicy Juice Mango 100% Juice
1 cup light coconut milk
1½ teaspoons salt, or to taste
1 tablespoon red curry paste
3 teaspoons yellow curry powder
1½ teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
juice of 1 lime (about 1 tablespoon)
⅓ cup oil
In a large bowl, whisk together the Juicy Juice Mango 100% Juice, coconut milk, salt, red curry paste, yellow curry powder, garlic powder, ground cumin, chili powder, lime juice, and oil until smooth. Reserve 1 cup and set aside.
Pour the rest into a large zip top bag and add the chicken breasts. Marinate at least 4 hours or overnight.
When ready to cook, preheat the grill to medium heat. Spray the rack with nonstick cooking spray and add the chicken breasts.
Brush some of the reserved sauce onto the tops of the chicken breasts. Cook 5-10 minutes on each side until the chicken is cooked through, basting with the reserved sauce as you go.
Remove from heat and baste with the sauce one final time. Top with fresh cilantro and chopped peanuts to serve.
