Summer Berry Ice Cream Cupcakes are a delicious treat perfect for the Texas summer heat. These yummy cupcakes feature a vanilla cake bottom topped with Mayfield Creamery ice cream. Serve them for summer parties or just because!
Mayfield Creamery makes a variety of iconic signature flavors, classics for the whole family, and an exciting array of limited time only varieties, all with the genuine southern homemade taste families across the southeast have loved and trusted since 1923.
Mayfield ice cream uses fresh cream from their own dairy – with no artificial growth hormones – from family recipes that have been perfected over three generations.
For this recipe, I decided to use Summer Berry Swirl, one of their newest flavors. Other flavors released this year include Lemon Ice Box Pie, Sea Salt Caramel Cheesecake, and Candy Jar Crunch.
I wanted to highlight its yummy flavor, so I paired it with a plain vanilla cupcake bottom and fresh summer berries.
