Strawberry Mango Fruit Rollups

Looking for a quick and nutritious snack for school lunches? Try these delicious Fruit Rollups!

I can not believe that school time is upon us. In three short weeks, my sweet boys will be off to school. While I will miss them dearly, I have to admit that I am ready for the structure that the school year brings. What I am dreading though, school lunches. The balance of feeding my kids nutritious meals with finding something they will actually eat, is so hard. Let’s not forget that no one likes to eat the same thing every day, so we have to be creative too!

DSC_0039aThis is where these Strawberry Mango Fruit Rollups come in. They are so simple to make and are extremely nutritious. The only ingredients are Strawberries, Mangos, and Juicy Juice 100% Mango Juice. I love using Juicy Juice to help make the fruit rollups sweeter. The sweetness of Juicy Juice comes straight form the fruit since there is no added sugar, high fructose corn syrup or artificial sweeteners. Each 8 ounces of Juicy Juice contains 1 cup of juice and 120% of Vitamin C. There are also 16 delicious flavors, so you could mix it up and make your own flavors of Fruit Rollups! DSC_0037a

Here is what you need:

2 cups of hulled strawberries

2 cups of mango (2 large mangos)

1/2 Cup of Juicy Juice mango juice

How to make it:

  1. Place rack in center of oven and preheat oven to 175 degrees F. (If your oven only goes to 200, open the door periodically during baking to cool it down.) Line a large rimmed baking sheet with a silpat mat or parchment paper. I used a silpat mat
  2. Purée strawberries, mango, and Juicy Juice in a food processor or blender until smooth. Add more juice as needed. Purée should be pourable.
  3. With a spatula, spread purée on lined baking sheet to 1/8-inch thickness. It may not extend all the way to edges. Spread as flat and as evenly as possible. Bake purée for 3 to 4 hours, until fruit no longer feels sticky but is still lightly tacky. Begin checking leather after 2 hours and continue to check every 30 minutes.
  4. Remove leather from oven and let cool completely on baking sheet. Lay a sheet of wax paper on top, then peel wax paper and leather off together. Transfer sheet to a cutting board, then slice it into desired sized strips or sheets. Roll and store or enjoy immediately.

    This fruit leather recipe sounds delicious! For a fun kitchen experience, you could even play papa’s freezeria while waiting for the fruit to dry. It’s a great way to pass the time and get inspired for creative flavors. Also, don’t hesitate to experiment with other fruits for unique combinations. Happy baking!
