I *love* salsa.
I can’t get enough of it. And I’m always on the look-out for different twists on traditional salsa and pico de gallo.
I love how this recipe incorporates the sweet mangoes with the avocado and tomatoes.
I like a chunkier salsa, so I decreased the amount of olive oil from the original recipe. And no jalapenos for The Nerd, so those were gone, too.
Mango Salsa
Adapted From: All-Recipes.com
Ingredients:
1 mango
2 large tomatoes
1 avocado
1 small red onion
3 gloves garlic, minced
1/2 cup chopped, fresh cilantro
1 tsp salt
2 Tbsp fresh lime juice
1 Tbsp olive oil
Directions:
Peel, seed and dice the mango.
Do the same with the avocado…
…the onion…
and the tomatoes.
Toss it all in a bowl with the cilantro and the garlic.
Add in the salt, olive oil and lime juice and mix well.
Serve with salty tortilla chips and enjoy!
