My family goes through fruit like Pooh goes through honey. We eat it all the time. I wanted a way to serve it this summer that would be tasty but make it go a bit further, so I made this Fruit Salsa with Cinnamon Sugar Chips. The chips are so yummy that I could snack on those alone.
This recipe would be the perfect dish to bring to a summer barbecue — it’s so light and fresh and every time I’ve taken it to a dinner, it gets gobbled up!
Fruit Salsa with Cinnamon Sugar Chips
Ingredients:
8 flour tortillas
Spray butter
1 tsp ground cinnamon
1/4 c + 2 tsp granulated sugar
2 peaches, diced
1 pkg strawberries, diced
4 kiwis, diced
1 can pineapple chunks, diced
Lemon juice, to taste
Directions:
Preheat oven to 350 degrees. Mix cinnamon and 1/4 c sugar together.
Cut each tortilla into 8 wedges with a very sharp knife. Spray with butter and sprinkle with cinnamon-sugar mixture. Place on a lined baking sheet and bake for 8 minutes. Remove from oven and allow to cool completely. They should be crispy and lightly golden.
In a large bowl, mix together the fruit. Sprinkle with sugar and add squirts of lemon juice to taste. Stir together and refrigerate until serving.
Serve with chips, and enjoy!
