With school and all of our activities starting back up, our family time is at an all-time low. It is important to me that we reconnect and spend some time together. I love throwing a blanket down on the floor, gathering the family together, handing out our favorite pizza rolls, and turning on a great movie. There is something about being crammed on the living room floor, laughing together with full bellies that warms my heart.
Today I would like to share our favorite pizza roll recipe with you. I love these because they are so easy to throw together and make ahead of time. I usually make them in the day while I have time and then re-warm them when it is time for dinner.
Pizza Rolls
Recipe adapted from chickensintheroad.com
Ingredients:
Dough
1 C Water
1 TBSP Olive Oil
2 1/2 C Whole Wheat Flour
1 TBSP Sugar
1 tsp Salt
1 tsp Active Dry Yeast
1 tsp minced garlic
1 C finely chopped pepperoni
1/2 C shredded mozzarella
Filling
Pepperoni slices
Pepper rings
Mozzarella cheese
*Any fillings that you want to add in
Directions:
I like to make my dough in my bread machine. It is so easy to throw the ingredients in and not have to babysit the dough.
If you do not have a bread maker you can follow these directions: Combine water, yeast, salt, sugar, minced garlic, oil, pepperoni, and cheese. Let sit five minutes. Stir in the first cup of flour and then continue adding it in a little at a time and kneading as you go. The amount of flour is approximate and you might need more. Let the dough rise in a covered bowl until doubled. Uncover bowl and knead again.
Once your dough is ready, roll it out into a rectangle. Make slices lengthwise down the dough to get the desired size of rolls you want. Slice down the other side, making little squares. Place pepperoni and peppers down (or any filling that you want), sprinkle with cheese, and roll up.
Make sure and seal the sides. Let rise for 30 minutes. Pre-heat oven to 350 degrees. Bake for 20-30 minutes.
ENJOY!
I hope that these pizza rolls find their way into your pizza night and that you check out some of the wonderful family movies that Netflix has to offer:
