My son, Andrew, is at that really fun toddler stage where they stop eating any kind of “real” food. If you are what you eat, then he’d be a giant chicken nugget filled with apple juice, goldfish, and macaroni and cheese.

Sometimes, you have to put your foot down as a parent and insist on a decent dinner. I’m always looking for ways to vary our meals for a healthy option that I’ll enjoy and Andrew will still eat. Sam’s Club recently released a new product from Tyson Foods — Crispy Chicken Breast Bites — that was exactly what I needed.

These bite-sized pieces of tender all-breast-meat chicken are seasoned to perfection, hand-breaded and pressure-cooked in peanut oil. They have a sweeter taste than traditional chicken nuggets, reminding me of the kind you can get at Chick-fil-A.

Tyson Crispy Chicken Breast Bites have a more refined restaurant-quality taste, and there is a premium price associated with this. However, it’s worth it to me, since we could easily spend four-times that for chicken nuggets at Chick-fil-A. And when you factor in the savings from Sam’s Club, it doesn’t get better than that!

I decided to use the Crispy Chicken Breast Bites to make Mango and Black Bean Chicken Wraps for lunch. I enjoyed them so much and Andrew even ate them! The sweet chicken flavor blended really well with the bits of mango and black beans. The lime vinaigrette added a tart flavor to the wraps that balanced out the sweetness.

Plus, these are really easy to throw together and serve.

Mango and Black Bean Chicken Wraps
Adapted From: Canadian Family

Ingredients:
4 multi-grain flour tortillas
12 pieces of Tyson Crispy Chicken Breast Bites, cooked according to package directions.
2 Tbsp fresh lime juice
2 Tbsp olive oil
1/2 tsp ground cumin
1 can black beans, rinsed and drained
1 large mango, peeled and diced
1/4 c cilantro, roughly chopped
1/4 c red onion, diced

Directions:

Mix together the lime juice, olive oil and cumin in a large bowl. Add the black beans and toss to coat with vinaigrette. Stir in the mango, cilantro and red onion.

Spoon the vegetable mixture down the tortillas. Add in the Crispy Chicken Breast Bites (about three pieces per wrap). Wrap up the tortillas and cut down the middle to serve.

    My goodness, those look so simple but delicious. I’m always looking for quick but healthy meals for my kids for lunch. We’ll have to try these out.

    Those look delicious! My son is at that stage right now too, thank goodness it’s not just him . He loves fruit though so this combination would probably win him right over.
