I’ve got another yummy St. Patrick’s Day treat for you today! This cheesecake is creamy and delicious. And the Guinness and chocolate combination are PERFECT together.
Guinness Chocolate Cheesecake

Ingredients:
1 c graham cracker crumbs
2 Tbsp cocoa powder
1 Tbsp sugar
2 Tbsp butter, melted
12 oz dark chocolate, chopped
2 Tbsp heavy cream
3 – 8 oz pkgs cream cheese
1 c sugar
1/2 c sour cream
3 eggs
1 tsp vanilla extract
3/4 c Guinness
Directions:
Preheat oven to 350 degrees F.
Mix together the graham cracker crumbs, cocoa powder, sugar, and butter and press into the bottom of a 9-inch spring form pan. I used three mini spring form pans that I found at Target.
Melt the chocolate in the cream in a double boiler.
Meanwhile, cream the cream cheese in a stand mixer. Add in the sugar, chocolate, sour cream, eggs, vanilla and Guinness.
Pour the mixture into the spring form pan and bake for 60 minutes. Turn off heat and leave cheesecake in the oven with the door slightly ajar for 60 minutes more.
Let it cool completely, then chill in the fridge overnight.
