Today, I’m continuing my series of recipes from Young Adult book authors. This recipe is very appropriate for fall. The flavors in these Apple Muffins are *amazing* and I immediately identified this recipe as one I wanted to try. I’m so glad I did! Topped with brown sugar and cinnamon, what’s not to love in this yummy breakfast treat?
Apple Muffins

Ingredients:
2 c flour
1/2 c sugar
3 tsp baking powder
1/4 tsp salt
1 c chopped apples
1 egg, slightly beaten
1 c milk
3 Tbsp melted butter
1/3 c brown sugar
1/2 tsp cinnamon
Directions:
Preheat oven to 400 degrees F. Sift together flour, sugar, baking powder and salt. Add chopped apples.
Combine egg, milk and butter and stir into the dry mixture until just enough to moisten. Pour into prepared muffin tin.
Mix together the brown sugar and cinnamon and sprinkle on top of the muffins. Bake for 25-30 minutes at 400 degrees F.

what a fun idea to have author recipes. We made apple cake this week and it was tastey! Now I will try these muffins since we have bushels of apples to eat.
