Sugar Cookie Cheesecake Bars

Sugar Cookie Cheesecake Bars are the perfect holiday dessert — sweet and golden brown, your guests will love them. And the best part is just how easy they are to make!

Sugar Cookie Cheesecake Bars

We used Pillsbury™ Sugar Cookie Dough from Walmart to make this yummy treat super simple. The holidays are so busy that I am always looking for ways to simplify my time in the kitchen so I can get back to what really matters — spending time with my family.

Sugar Cookie Cheesecake Bars combine two of my favorite desserts into one scrumptious holiday treat. Perfect for holiday parties or when friends and family visit, your guests will be begging for more.

Sugar Cookie Cheesecake Bars

Recipe adapted from Culinary Hill

Here’s what you need to make Sugar Cookie Cheesecake Bars:

  • 30 oz Pillsbury™ Sugar Cookie Dough roll
  • 1 whole eggs plus 3 egg yolks
  • 1 1/2 tsp vanilla
  • 2 (8 ounce) packages cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup sugar

Preheat oven to 350 degrees F. Line a 9×13 baking dish with parchment paper, leaving some hanging over the edges to make removing the bars easier.

Press the sugar cookie dough into the bottom of the prepared pan. It should be the same thickness to ensure even baking. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese, sour cream, and sugar until smooth.

Add the egg, egg yolks, and vanilla and beat until smooth.

Pour over the sugar cookie dough in the pan and shake the pan to smooth the top.

Bake for 35-45 minutes until top is golden brown and center is set. Cool at least 30 minutes.

Remove from pan and cut into bars.

Sprinkle top with powdered sugar. Store in the refrigerator until time to serve.
