Last week, I posted the technique I used to edit this food photo.
But I left you wondering what exactly these cookies were.
Well, now here’s the answer!
If you can’t tell, I really like Rolo candies.
These chocolate cookies taste like brownies with the chewy caramel flavor in the center.
Can you say yummy?
My sister shared this recipe with me on our trip to New Mexico.
And I’m so glad she did!
Rolo Cookies
Ingredients:
2 1/2 cups flour
3/4 cups cocoa
1 tsp baking soda
1 cup sugar
1 cup brown sugar
1 cup butter
2 tsp vanilla
2 eggs
1 pkg rolos

A bit of sugar for garnish
Directions:
Preheat oven to 375 degrees.
Beat sugars and butter until fluffy.
Add vanilla and eggs to mixture.
Beat until combined.
Combine flour, coca, and soda.
Add flour mixture to fluffy mixture.
Unwrap the Rolo candies and get them ready for action!
Shape about a teaspoon of dough around each Rolo.
Be sure to cover it completely.
You want it to be about the size of a golf ball.
About this time, The Minions started to get interested in what I was doing.
I guess they were hoping for me to drop a few scraps…
They were sorely disappointed.
Look at all those future cookies!
Press one side of the dough ball into the leftover sugar.
Place sugar-side up on a baking sheet, about two inches apart.
You’ll end up with about three dozen cookies. If you don’t want to make that many right away, just put the dough balls in a Ziploc bag and freeze them.
Bake for eight minutes until the edges start to crisp.
Yummy!
Doesn’t the caramel inside look good enough to eat?
Serve these bad boys just out of the oven with a glass of cold milk.

Yum!!! Our pups are the same way. I really don't mind though…I have yet to have to clean up spilled sugar, flour, or bits of dough!
That said, I do have to mop after they're done "cleaning" lol.

Wow! I love Rolos and I now know what to make in celebration for my friend who is doing an IronMan this weekend. He'll be able to eat the whole batch with as many calories as he'll be burning off. Do you think these ship well? (As in, don't need to be refrigerated.)

The cookies should ship fine — I would definitely wait for them to cool and harden because they tend to fall apart when warm. Also, tell your friend to heat them up in the microwave for 5-10 sec before eating them — that will soften up the caramel in the center! Good luck!
