With summer in full swing, one of my favorite go to summer treats is Ice Cream Cookie Sandwiches. They are so simple, easy, and quick to whip up. All you need is your favorite chocolate chip cookie recipe and some creamy Blue Bunny Homemade Vanilla Ice cream. These two combination are sure to make your mouth water.
While I was at Walmart, we got to sample some delicious Blue Bunny at a live Demo they were having. It was so creamy and the flavor was perfect. I knew that it would be the perfect addition to my recipe. You can try some for yourself at more live demos they are having for Blue Bunny in August.
Homemade Ice Cream Cookie Sandwiches
Here’s what you need to make Homemade Ice Cream Cookie Sandwiches:
- 8 tablespoons of salted butter
- ½ cup white sugar
- ¼ cup packed dark brown sugar
- 1 teaspoon vanilla (but I always add a little extra)
- 1 egg
- 1½ cups whole wheat flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup chocolate chips (I use semi-sweet)
Preheat the oven to 350 degrees. Microwave the butter for about 40 seconds to just barely melt it. It should be almost entirely in liquid form.
Using a stand mixer, beat the butter with the sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated, about 10-15 seconds.
Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball that is easy to handle. If it is sticky add a little more flour.
Mix the chocolate chips in and incorporate with your hands.
Roll the dough into 12 large balls and place on a cookie sheet. Bake for 12 minutes until the cookies look puffy and dry and just barely golden.
Let them cool on the pan for a good hour or so.
Once cooled, grab you Blue Bunny Ice Cream out of the freezer and let it stand for about 8-10 minutes to soften.
Scoop out one scoop of vanilla ice cream on the bottom of a cookie and press another cookie on top of that one.
Wrap in plastic wrap and place back in the freezer for at least 3 hours to allow everything to harden.
Pull out of the freezer and enjoy!!
