Cinnamon Sugar Banana Bread

The Nerd *loves* banana nut bread, and this version adds cinnamon and sugar for a yummy twist on a classic.

Cinnamon Sugar Banana Bread
Adapted From: Our Own Ordinary
Ingredients:

4 very ripe bananas
1/3 cup melted butter
1 cup sugar
1 egg
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1 1/2 cup flour
1/2 cup walnuts
1/2 cup raisins
1/3 cup sugar mixed with 1 Tbsp. cinnamon
Directions:
Preheat oven to 350 degrees.

Peel the bananas and add them to a bowl. Mash them with a fork or spatula.

Add the butter, sugar, egg and vanilla to the bananas and mix with a rubber spatula.

Sprinkle the baking soda and salt on top of the banana mixture.

Slowly stir in the flour, making sure it is well incorporated.

Mix in the walnuts and raisins.

Pour half the batter into a greased loaf pan. Sprinkle 2/3 of the cinnamon and sugar mixture on top of that.

Pour in the rest of the batter and sprinkle the left-over cinnamon/sugar on top.

Bake for 45-50 minutes. Let it cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.

Slice and serve!

    My bread pan sucks and I couldn't get the bread to cook properly in the middle. So I cut it up and fried it and turn this bread into french toast. To. Die. For.

    That bread looks amazing! I will have to try that! I noticed in another post that mentioned Darth Andy–he was wearing an A&M hat. My husband is Class of '99 (I was class of '00 but I didn't finish school there. I finished at Texas State University many years later…hehe).

    Good to find another Texas blogger. 🙂

    This is a great recipe! When i made it instead of using cinnamon sugar i used nutella! poured half the batter in then put a generous serving of nutella, poured the rest of the batter then more nutella on top. Baking time took a bit longer but turned out fantastic. Nutella and banana is a great combination. Thanks for the recipe!

    im making this right now! I'll let you kknow what me an my boyfriend think. We used chocolate chips in place of the walnuts and raisins though because we didn't have those ingredients.
