Cheesy Mashed Potato Pots

Cheesy Mashed Potato Pots

Do you have certain dishes that are served every holiday? For us, it’s mashed potatoes. And that can get boring after a while. So I made these Cheesy Mashed Potato Pots as an experiment to change things up. They definitely delivered!

The addition of cheese and whipping cream makes these potatoes creamy and adds some rich flavor. I also love that they’re served in individual ramekins — everyone gets their own!

I used my Lodge Bakeware ramekins from Market Street for this dish — I love their ivory color, and they’d make a beautiful addition to your holiday table. Food that doubles as decoration? I couldn’t resist!

Cheesy Mashed Potato Pots

Adapted from: BHG

Ingredients:
2 pounds potatoes, peeled and cubed
Water (for boiling)
2 Tbsp butter
2-3 Tbsp milk
1/2 c whipping cream
1/2 c shredded cheddar cheese
Salt and pepper, to taste

Directions:

Cover the potatoes in water, add butter and some salt, and boil until the potatoes are tender and cooked through.

While the potatoes are cooking, add the whipping cream to the bowl of a stand mixer and whip on high until soft peaks form. Set aside.

Drain and mash potatoes, adding milk to reach desired consistency. Add salt and pepper to taste.

Add potatoes to ramekins, and top with whipped cream. Sprinkle on some shredded cheese.

Bake in oven at 350 degrees for about 20 minutes, until the cheese has melted and the potatoes are heated through.
