Blackberry Cobbler

Well, we had lots of blackberries left over from our adventure.
So, what better to make than good ol’ fashioned blackberry cobbler?
This cobbler has a hint of cinnamon and sugar. It’s delicious!

Ingredients:
For the filling:
30 oz (about 3 1/2 cups) of blackberries
1/4 – 1/3 cup sugar (depending on tartness of the berries)
2 tbsp fresh lemon juice
1 tbsp cornstarch
1/2 tsp ground cinnamon
For the crust:
1 cup unbleached all-purpose flour
3 tbsp yellow cornmeal
1/4 cup sugar plus 2 tsp
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup buttermilk
3 tbsp unsalted butter, melted
1/2 tsp vanilla extract
1/8 tsp ground cinnamon
Directions:
Preheat oven to 400 degrees.
Put filling ingredients in a pie dish.
Stir together, coating the berries.
Bake for 20-30 minutes, until the fruit releases its juices and the edges start to bubble.
Meanwhile, whisk together the flour, cornmeal, baking powder, baking soda, salt and 1/4 cup of sugar.
Set aside.
In a separate bowl, whisk together the buttermilk, butter and vanilla.
Stir together the cinnamon and 2 tsp sugar.
When the topping is ready, pull it out of the oven.
Stir together the flour mixture and the buttermilk mixture until just combined, making sure there are no pockets of flour left.
Pinch off eight equal pieces of the biscuit dough. I set mine out on plates (two aren’t pictured) to make sure they were all the same size.
Place on top of the filling, about 1/2 inch apart. 
The dough will spread out as it bakes.
Sprinkle the cinnamon and sugar mixture on top.
Bake another 15-20 minutes, until the filling is hot and the biscuits are cooked through and golden brown.

    I love berry cobblers. This looks great. And I had to laugh when I saw your blog name. Thanks for bringing back memories of watching star trek with my Nana!
