Silk Soy Milk is a staple in our house. When Andrew was a few months old, he had *horrible* acid reflux, which turned out to be a milk intolerance. When he turned 1, we immediately switched him from soy formula to Silk Soy Milk.
The Nerd and I are both lactose-intolerant, so it’s no surprise that our family of three goes through several cartons of Silk Soy Milk each week.
We love the new flavor — Vanilla is our favorite. And it’s a good thing, because Silk Vanilla provides as much calcium as milk and 6 grams of soy protein, which nutrition experts agree is comparable in quality with the protein found in dairy products. Silk is also a natural source of omega-3s and protective antioxidants, is very low in saturated fat and is 100% cholesterol-free.
So when I was looking for a fun Valentine’s Day recipe I could make as an activity with Andrew last week, I knew that Silk Soy Milk would be a great addition to these truffles.
We decided to just stick with plain chocolate truffles, using high-quality chocolate chips. I bought an array of Valentine’s Day sprinkles at Wal-Mart, and our family had fun rolling the truffles in the sprinkles to decorate them.
These truffles are really creamy and have a great flavor, thanks to the Silk Soy Milk! I’m really excited to share these with our family and friends as Valentine’s Day gifts.
Silk Soy Milk Truffles
1 1/3 c good quality chocolate chips
1/3 c Silk Soy Milk
Assorted sprinkles to decorate
Stir together the chocolate chips and Silk Soy milk in a metal or glass bowl. Set it on top of a pot of boiling water and melt, stirring constantly.
Once the chocolate has melted and has a shiny appearance, remove it from the heat and transfer to another bowl.
Refrigerate until you can scoop the chocolate from the bowl, about 2-3 hours.
Mold the chocolate into teaspoon-sized balls, rolling in the sprinkles to decorate. You can coat a spoon and your hands with vegetable oil to prevent the chocolate from sticking.
Keep refrigerated and serve cold.
